Cooking Fresh Sausage
- Normally made in 12.5# batches using 7.5# of venison and 5# of lean pork. We offer over 50 varieties of fresh sausage. Our fresh sausage is available in four forms: bulk, patties, links, or meatloaf pans. Bulk may be used in any of your hamburger recipes with each variety giving you a unique flavor.

adapted from Lanier bed and breakfast recipe:
4 eggs (room temp.)
2 cups milk
1 cup baking mix
1/2 cup each, shredded cheddar and jack cheese
1/4 tsp.garlic powder
1/4 tsp.onion powder
salt and pepper, to taste
1/2 tsp. fresh basil
saute sausage and vegetables of choice in pan.
pour into pie plate and sprinkle shredded cheese over sauteed mixture.
into blender, add eggs, milk, baking mix and seasoning.
blend until smooth (20 seconds).
pour over ingredients in pie plate.
bake at 350 for 45-60 minutes.
after pulled from hot oven, I sprinkle finely shredded smoked white cheddar over the top.

I worked today, but even though I did I still wanted to come home and make a nice sunday dinner. I like to make this sausage casserole, because it's easy and very little effort - and tastes good. These are some of the ingredients - yellow pepper, red onions and basil. Yum!
